01 - 20 rectangular whole-grain crackers

02 - 8 slices cheddar cheese
03 - 8 slices Swiss cheese

04 - 1 large cucumber
05 - 1 large carrot
06 - 1 yellow bell pepper
07 - 16 pitted black olives

08 - 2 tablespoons cream cheese
09 - 8 fresh chive stems
# How To Make It:
01 - Wash and peel the cucumber and carrot. Slice the cucumber into thin, long strips; cut the carrot into thin matchsticks; and slice the yellow bell pepper into thin strips.
02 - Place one cracker flat as a base and spread a thin layer of cream cheese evenly over it.
03 - Top with a slice of cheddar cheese, a few cucumber strips, and several carrot matchsticks.
04 - Place another cracker on top, spread a thin layer of cream cheese, then add a slice of Swiss cheese, some bell pepper strips, and two olive slices.
05 - Repeat layering alternating cheese and vegetable combinations until there are 5 crackers stacked to create a colorful tower.
06 - Insert a chive stem vertically along the side of the stack to mimic the giraffe's neck. Place an olive slice on top as the head and two small carrot pieces as ossicones.
07 - If necessary, insert a toothpick through the stack to hold it together. Repeat assembly to create 4 individual stacks.
08 - Present immediately to maintain optimal texture and freshness.
