12 - 1 small garlic clove, minced

→ Toppings

14 - 1 tbsp toasted sesame seeds
15 - 1 tbsp pumpkin seeds

# How To Make It:

01 - Peel the carrots and process them through a spiralizer to create thin, noodle-like strands.
02 - Divide the carrot noodles evenly between two serving bowls to create the foundation of each dish.
03 - Layer cucumber slices, julienned red bell pepper, fresh avocado, and baby spinach on top of the carrot noodles. Garnish with chopped cilantro.
04 - Combine tahini, lime juice, water, maple syrup, soy sauce, minced garlic, salt, and pepper in a small bowl. Whisk vigorously until completely smooth and creamy. Add additional water if a thinner consistency is desired.
05 - Drizzle the tahini-lime dressing generously over each prepared bowl, ensuring even distribution.
06 - Sprinkle toasted sesame seeds and pumpkin seeds over the top for texture and visual appeal.
07 - Enjoy the bowl right away while the vegetables remain crisp and the avocado is fresh.

# Expert Advice:

01 -
  • The way the tahini-lime dressing clings to each carrot spiral creates little pockets of flavor that burst with each bite, turning a simple vegetable into something extraordinary.
  • You can assemble the entire bowl in less time than it takes to boil pasta, yet the visual impact will have everyone reaching for their phones before their forks.
02 -
  • Never spiralize your carrots in advance as they quickly dry out and lose that perfect al dente texture that makes this dish special.
  • If your tahini dressing seizes up and becomes too thick, adding a splash of warm water while whisking vigorously will bring it back to silky perfection.
03 -
  • Massage a tiny amount of lemon juice into your avocado slices to prevent browning while maintaining their buttery texture and flavor.
  • Reserve the carrot tops to blend into the dressing for zero waste and an herbaceous flavor boost that complements the root vegetable perfectly.
