02 - 1 cup cucumber, thinly sliced
03 - 1 cup red bell pepper, julienned
04 - 1 ripe avocado, sliced
05 - 2 cups baby spinach
06 - 2 tbsp fresh cilantro, chopped

07 - 2 tbsp tahini
08 - 1 tbsp lime juice, freshly squeezed
09 - 1 tbsp water
10 - 1 tsp maple syrup
11 - 1 tsp soy sauce or tamari
12 - 1 small garlic clove, minced
13 - Salt and pepper, to taste

14 - 1 tbsp toasted sesame seeds
15 - 1 tbsp pumpkin seeds
# How To Make It:
01 - Peel the carrots and process them through a spiralizer to create thin, noodle-like strands.
02 - Divide the carrot noodles evenly between two serving bowls to create the foundation of each dish.
03 - Layer cucumber slices, julienned red bell pepper, fresh avocado, and baby spinach on top of the carrot noodles. Garnish with chopped cilantro.
04 - Combine tahini, lime juice, water, maple syrup, soy sauce, minced garlic, salt, and pepper in a small bowl. Whisk vigorously until completely smooth and creamy. Add additional water if a thinner consistency is desired.
05 - Drizzle the tahini-lime dressing generously over each prepared bowl, ensuring even distribution.
06 - Sprinkle toasted sesame seeds and pumpkin seeds over the top for texture and visual appeal.
